Lightly spiced rice with a coconut flavour.

Ingredients

  • 100g Wholegrain Organic Brown Rice

  • 250ml Coconut Milk

  • 1/6 tsp cinnamon (ground)

  • 1/8 tsp chilli powder

  • 1/4 tsp Sea Salt

  • 300ml water (as required)

Directions

  • Add the rice, coconut milk, half the water, cinnamon, chilli powder and salt to a saucepan and bring to the boil.
  • Simmer and stir frequently until most of the liquid is absorbed.
  • Add more water if required and cook until the rice is tender (add water a little at a time).
  • When most of the water is gone, cover and remove from the heat.  The remaining liquid will absorb and the rice will be nicely steamed.
