A delicately flavoured soup with a slightly sweet taste.

Ingredients

  • 2-3 cloves Garlic, chopped

  • 2 Leeks

  • 1/2 Courgette

  • 1 small Red Pepper, de-seeded

  • 1/4 Cauliflower

  • 1/2 Sweet Potato

  • 1/4 Butternut Squash

  • 2 handfuls Garden Peas

  • 1 cube frozen Spinach (or fresh is fine)

  • 1.5 litres Vegetable Stock

  • 3 tbsp Olive Oil

  • 1 tsp Sea Salt

  • 3 tbsp Chopped Parsley

Directions

  • Chop everything into smallish pieces.
  • Heat the olive oil in a large saucepan and add the onions.  Cook for a few minutes until soft.
  • Add the garlic and leeks and cook for a few more minutes.
  • Add the stock and the remaining ingredients, except the Salt.
  • Bring to the boil and then simmer for 30 minutes.
  • Add salt to taste and blitz with a stick blender for a smooth soup before serving.
  • Serve with freshly Soda or Sourdough Bread.
