Vegetable Soup

minutesA delicately flavoured soup with a slightly sweet taste.
Ingredients
2-3 cloves Garlic, chopped
2 Leeks
1/2 Courgette
1 small Red Pepper, de-seeded
1/4 Cauliflower
1/2 Sweet Potato
1/4 Butternut Squash
2 handfuls Garden Peas
1 cube frozen Spinach (or fresh is fine)
1.5 litres Vegetable Stock
3 tbsp Olive Oil
1 tsp Sea Salt
3 tbsp Chopped Parsley
Directions
- Chop everything into smallish pieces.
- Heat the olive oil in a large saucepan and add the onions. Cook for a few minutes until soft.
- Add the garlic and leeks and cook for a few more minutes.
- Add the stock and the remaining ingredients, except the Salt.
- Bring to the boil and then simmer for 30 minutes.
- Add salt to taste and blitz with a stick blender for a smooth soup before serving.
- Serve with freshly Soda or Sourdough Bread.
