Ingredients
400g can of Chickpeas (pre-soaked)
1 tbsp light Tahini
1 small clove of Garlic
3 tbsp Lemon Juice
75ml Warm Water
1/2 – 1 tsp Sea Salt
2 tbsp Olive Oil
2 tsp Ground Cumin (optional but delicious!)
Directions
- Drain and rinse the chickpeas.
- Mix the tahini and water with a fork to get a thin paste consistency.
- Put the chickpeas, tahini mix, lemon juice and garlic in a food processor and begin to blend.
- While blending, add the olive oil, cumin and salt to taste. Test for flavour, adding more salt if needed.
- Blend to your desired consistency. Less time if you like it more chunky, longer if you like it smooth. Add a little more water if needed.
- Transfer to a bowl and make a small well in the centre. Pour in a little high quality olive oil. Serve with chunks of carrot, celery or french breakfast radish works very well!
