Hummus

Healthy dip made with chickpeas.

Lovely snack dip or appetiser.

Ingredients

  • 400g can of Chickpeas (pre-soaked)

  • 1 tbsp light Tahini

  • 1 small clove of Garlic

  • 3 tbsp Lemon Juice

  • 75ml Warm Water

  • 1/2 – 1 tsp Sea Salt

  • 2 tbsp Olive Oil

  • 2 tsp Ground Cumin (optional but delicious!)

Directions

  • Drain and rinse the chickpeas.
  • Mix the tahini and water with a fork to get a thin paste consistency.

  • Put the chickpeas, tahini mix, lemon juice and garlic in a food processor and begin to blend.

  • While blending, add the olive oil, cumin and salt to taste. Test for flavour, adding more salt if needed.
  • Blend to your desired consistency. Less time if you like it more chunky, longer if you like it smooth. Add a little more water if needed.
  • Transfer to a bowl and make a small well in the centre. Pour in a little high quality olive oil. Serve with chunks of carrot, celery or french breakfast radish works very well!
